You need to have a variety of vegetables which translates to vegetables of different colors. If your idea of vegetables is onions, cauliflower and mushrooms it is not enough. You have to add greens – such as spinach, collard, kale; yellow and orange – carrots, yellow capsicum, pumpkin, sweet potatoes; red and purple and blue – such as beet, kidney beans, red capsicum, cherries, strawberries, prunes etc.
